Quercy saffron
A saffron farm in the middle of the vineyards. In 2017, I set up La Nadalle saffron farm in Duravel in the Lot Valley, in an exceptional area, where I produce original, organic saffron on 7,000 m2 of rotational land.
This is an exciting spice to grow! Harvesting begins in October and is done by hand. To pick the flowers, the temperature has to drop below 9°C at night. I do a pass every morning. I pick the closed flowers, an average of 1,000 an hour. Spread out on a sheet, they are opened until the next stage, when I prune them to recover the red pistil. Once the pistils have passed through the dehydrator, the result is saffron.
